Celebrating the Two Year Anniversary

In the last post I showed you pictures of the day we first met Penny back in 2008. In this post I'll show you what we did on this December 11th, 2010. In the morning Penny and I went to pick up a Mongolian woman. She speaks Mongolian, Mandarin Chinese, Japanese and a tiny bit of English. We took her to our Japanese church. It was really fun for me to communicate with her in Japanese. She and Penny were just delighted to try to communicate in Chinese. She treated Penny as if she were her auntie. After the church service we went shopping together and then took her home where she served us VERY generously at a tea time.

After a little more grocery shopping, Jay and Penny and I went out to Toy's Thai Cafe. We were all very pleasantly delighted at how authentic the food tasted. We've all decided that this our new favorite of the handful of Thai restaurants here in Ft. Collins. Everyone working there was Thai and the owner was so kind and patient with Penny that we noticed her Thai really started coming back to her. She had such a positive experience there that she was talking about how she might like to get a part-time job there someday. When we got home we looked back from some of our photos from our first five weeks together in Thailand and then snuggled on the bed with our kitty, Jenny. So much fun! We are so thankful!

Oh, yummy! Is that larb in the second photo? I could live on a diet of larb and larb alone!

Can you believe two years already? The time when they are home goes so much faster than the waiting for them to come home. Hope all is well.

Miss you!!!
